Over medium heat, In a heavy-bottomed pan, fry mustard seeds, cumin seeds, fenugreek seeds, coriander seeds, chilies, garlic in a little oil. Soak the fried iems in water for 10 minutes.

In a heavy-bottomed pan over medium heat, fry the ridge gourd pieces with curry leaves in a little oil until the raw smell goes away - 5 minutes. Add turmeric powder, turn off the heat; let cool

First, blend the soaked items in a blender. Add the cooked rige gourd pieces, ginger, curry leaves and tamarind and blend. Add salt and mix. A delicious chutney is ready. Transfer to a serving bowl.
Serve with rice, dosa, uppuma or Adai.
