An instant preserve that requires no cooking at all . Here jaggery acts as a preservative. You can store this preserve for 1 year in fridge. This is a sweet & sour Gujarati preserve , favourite amongst Gujaratis . It is eaten with thepla , bhakri , roti , handvo , fried snacks . Its sweet & sour taste makes it favorite amongst both young & old . It is very quick to make , barely 5 minutes & the ingredients are easily available at home .

Steps

Wash, wipe & remove the seed from the mango. Do not peel the mango.

Chop into small pieces.

Chop jaggery also finely.
- 4
Take mango pieces, 1/2 the jaggery, kashmiri red chilli powder, cumin seeds & salt in the mixer jar.

Blend coarsely. Add rest of the jaggery & blend again till smooth.

The jaggery & mango should blend very well together & look like one smooth paste.

Remove & store in a sterilized bottle in fridge. Relish it with puri, bhakri, paratha or roti.

Note : As I have used powdered jaggery the colour of this preserve is a bit dark. Powdered jaggery tends to blend faster then chopped jaggery.
