Pizza night at home tonight—first time making calzones, and surprisingly, my pizza turned out round instead of the usual odd shape.

Pour 1 cup warm water (220 grams) into a bowl and add 1 1/2 teaspoons fresh yeast (5 grams) and 1 teaspoon sugar (5 grams). Mix and let sit for 3 minutes.

Add 3 1/4 cups all-purpose flour (400 grams) and 1 1/2 tablespoons olive oil (20 grams), then mix. Add 1 teaspoon salt (5 grams) and knead for 6 minutes.

Cover the dough for the calzones with a towel or lid and let it rise for 10 minutes. Lightly flatten the risen dough, roll it in both directions, and cut it into three equal parts.

Shape the three pieces into balls, round them out, and let them rise on the table, covered with a towel, for 30 minutes or until the dough for pizza and calzone has risen enough.

Roll each ball with a rolling pin into a uniform disk about 8–9 inches (20–22 cm) wide. Add tomato sauce, mozzarella, and any other toppings you like to the center. Fold over like a giant ravioli, pressing and pinching the edges several times to seal. Bake in a conventional oven for 12 minutes at 450°F (230°C).
