Dill Leaves White Rice

Dill leaves, also known as Sowa or Soa. They are highly aromatic, adds flavour to various culinary dishes. Used in various forms such as curries along with lentils or can be used to make tea, chella or can be cooked as a vegetable along with potatoes which is a most common way of consuming them.
But I prepared them with Rice. As Rice is the only ingredient which is consumed here daily either it can be Hyderabad/Andhara. South Indian meals are incomplete without Rice.
So, its a simple, aromatic rice recipe, known as Soa Kura in Telegu. I have prepared rice by my own way which I use in my cooking. But you can opt any other method and cook accordingly depending upon the type of rice you are using for the recipe or use water ratio as per the rice.

Take ingredients to prepare Rice. Wash, Rinse and soak Rice in water for around 30 minutes.

After 30 minutes, drain water from the Rice. Now take a pan, pour 2 cups of water and allow to boil, when the water begins to boil, add 1 teaspoon of oil to prevent them from turning sticky. Add drained rice in the water.

Mix it well. Cover and cook until the rice turns tender. Keep aside.

Do other preparations, take 1 bunch of Dill Leaves. Separate the stems.

Chop them and wash throughly with water.Take all other ingredients together to prepare Dill Leaves Rice

Heat oil in a wok, add 1 tablespoon of peanut and roast until they turn crispy. Keep aside.

In a same wok, add 1 teaspoon of Mustard seeds, 1 teaspoon grated ginger, 1 green chilli, 6 to 7 curry leaves, pinch hing, 1 onion, 1 dried red chilli. Saute until the onion slightly changes its color.

Add 1 cup chopped dill leaves. Saute until they turn aromatic.

Add prepared rice, 1 teaspoon salt or 1/2 teaspoon pepper powder and roasted peanuts.

Mix well and cook for 3 to 4 minutes on low medium heat. Finally, sequeeze half of lemon and mix well ensuring the rice seems separated and not sticky.

Can be enjoyed right away or with a Dal, curries or curd.

Note - Its better to remove the rice from stovetop when they are about to cook or you can say 90% cooked, rest can be cooked when combined with prepared Dill leaves.
