Another one of my favorite dishes during Lent is a recipe from my mom. Happy Mother's Day.
Steps

Heat the vegetable oil in a skillet over medium heat. Add the onion and garlic and sauté for 5 minutes.

Once softened, add the sardines, juice of half a lemon, cilantro sprigs, and bay leaf. Cook for 7 minutes over medium heat. When done, set aside.

In a bowl, combine the chopped tomatoes, onion, serrano peppers, cilantro, juice of half a lemon, and salt.

Once everything is ready, serve the sardines with the pico de gallo salsa. Enjoy with rice or tortillas.
