Ingredients

  • Curry Paste
  • 2Onion, roughly chopped
  • 4Garlic cloves, peeled
  • 3 cmGinger root, peeled and chopped
  • 40 mlraw Cashew Nuts
  • 13 mldried Lemon Grass
  • 2red Chillies, deseeded
  • 3 mlTurmeric powder
  • 6 mlFish Sauce
  • 3 mlShrimp Paste
  • Main Dish
  • 20 mlCoconut Oil
  • 1 canPineapple rings, drained and chopped
  • 1Queen Pineapple, peeled and chopped
  • 400 mlCoconut Cream
  • 430 graw Prawn, shelled and de-vained

Steps

  1. 1

    Place all the Curry Paste ingredients in a food processor and purée until very smooth Curry Paste. A little water can be added to assist in the grinding.

    Heat Coconut Oil in a large wok.

    Fry the Curry Paste for 5 minutes, stirring. Add more time if water was added in making the Curry Paste.

    Add Pineapple chunks and 120 ml canned Pineapple juice. Cook for 5 minutes, stirring.

    Add Coconut Cream and stir till heated through.

    Add Prawn and simmer till Prawn is cooked. Serve with rice.
