For me, a barbecue isn't complete without aioli. Even though everyone in my family has their own version, today I'm sharing my mom's recipe.

Crack the egg into the jar of an immersion blender or regular blender. Add a pinch of salt. Peel the garlic cloves, remove the green center, and chop them.

Add sunflower oil to the jar until it reaches the 1 cup (250 ml) mark. Place the blender all the way to the bottom and blend on high speed without moving the blender.

When the mixture starts to thicken and becomes smooth, gently lift the blender up and down for about 3 seconds until everything is fully combined, then stop.

Now it's ready to use.
