Begin by frying the mashed eggplant in a pan over low heat.stir occasionally,and then add oil and spices,to sauté until the eggplant loses its raw taste.

Peel and crush the garlic with a little salt.fry the garlic in a separate pan with oil until golden brown,then add it to the eggplant mixture on low heat.

Fry two of egg, then break them in to small pieces and add them to the eggplant mixture.stir in some butter,mix well and cover the pan to let the flavors meld and the dish cook thoroughly.

Peel (or leave the skin on)and chop the tomato.sauté it in a pan until the moisture evaporates,then add some oil to fry it.once it’s a bit crispy,add the tomato paste and cook until the color darkens,creating a rich,flavorful sauce.

Add tomato mixture to the eggplant mixture stirring everything together.let it cook on law heat,allowing the flavor to blend and the dish to release its oils

Befor serving,fry the remaining egg and placed it on top of the dish in the serving dish

Serve the mirza ghasemi hot,with rice and accompaniment such as olives and smoked fish,pickled vegetables (hafte bijar),and garlic pickles.ENJOY 👍🌺
