
Gambas al Ajillo 🦐 (Garlic Shrimp)

Peel the shrimp 🦐, season with salt, and set aside the heads. (If using pre-peeled shrimp, skip this step.)

Add the shrimp heads 🦐 to plenty of olive oil with one unpeeled garlic clove 🧄. Squeeze the heads to release their juices. When the oil turns red, strain it.

Chop the remaining garlic cloves 🧄, add them to the strained oil, and sauté for 1 minute.

Add the shrimp 🦐 and cook for 30 seconds on each side.

Sprinkle with chopped fresh parsley (or use dried) and add salt to taste.

Note: If using peeled shrimp without heads, skip the step with the heads. Sauté the garlic 🧄, then add the shrimp and parsley 🌿.
