  • 1boiled potato
  • About 4 oz ricotta cheese (about 120 grams)
  • 1/4 cupvegetable oil (60 ml)
  • 1 tablespoonghee or unsalted butter
  • 1/2 cupwhole milk (120 ml)
  • 1 teaspoonactive dry yeast
  • 1 tablespoonsugar
  • 1/4 teaspoonsalt
  • 1/2 teaspoonbaking powder
  • 1 1/2 cupsall-purpose flour (about 190 grams, as needed)
  • For topping
  • 1 tablespoonghee or unsalted butter
  • 1 tablespoonsesame seeds
  • 1 teaspoonfennel seeds
  • 1 teaspoonanise seeds

    Blend the cheese, milk, potato, and oil in a food processor until smooth and creamy.

    Add the mixture to the rest of the ingredients and knead in a bowl.

    Let the dough rise for 30 minutes.

    Divide into balls.

    Shape into discs and place on a baking sheet.

    Brush with ghee or butter, sprinkle with sesame, fennel, and anise seeds, and let rest for 10 minutes.

    Bake in a preheated oven at 430°F (220°C) until golden brown.
