I made apple thokku/pickle to go with veggie pancake/uthappam. I packed the tiffin box with berries and nuts also. I made another box with raitha, carrots This lunch box is good for kids as well as adults. #TH

Mix rice flour, semolina, urad flour, spice powders, and yogurt together. Add vegetables. The dough should not be watery or lumpy. Add baking soda and salt and stir and rest for 30 minutes

Place a pan on medium heat and grease it with oil. Always use medium heat. Pour 1 cup of batter and make round shaped pancakes with a spoon. Pour 1 teaspoon of oil on top and cover it. Cook for 4 or 5 minutes until the aroma comes out. Turn it over and cover it for 3 minutes. It may take 10 minutes to make one pancake. Cooking time depends on the oven. Size. You can make 6-8 pancakes. Pancakes are soft, spongy, aromatic and flavorful

To make apple thokku: use a kadai for making the thokku. Place it on medium low heat.
Fry mustard seeds in oil on medium flame, add turmeric powder, cumin, chilli powder. Add ginger garlic paste and apple slices. Add 1 cup lemon juice and salt and cook, stirring occasionally to prevent sticking. Place a skillet over medium heat and fry ¼ cup mustard seeds and fenugreek seeds for 2-3 minutes. Cool, grind and add to the apple mix in the kadai. Stir. oil will separate in the pan. Thokku is ready. - 6
Prepare the tiffin box/lunch box as shown in the picture. Arrange the pancake, thokku in the lunch box. Put some nuts, fruits in the lunch box.You may also place a cup o raitha nd carrot sticks. A delicious, nutritious lunch that is a feast for the eyes and the palate is ready
