Lemper Ayam - Steamed Glutinous Rice with Spiced Chicken Floss

Lemper ayam is a traditional Indonesian snack. It consists of white glutinous rice filled with shredded chicken floss. The chicken and sticky rice are cooked with fragrant spices and herbs, which contribute to the delightful flavor of this sticky rice . Typically, they are wrapped individually in banana leaves and then pan-fried to infuse the sticky rice with the flavor of the leaves. I consider lemper to be the Indonesian equivalent of onigiri, though, of course, we don’t eat the banana leaves, just the rice and the filling. This dish brings back memories of my childhood when I would accompany my mother to the traditional market every morning, where she would buy me lemper and other traditional Indonesian snacks as a treat, which I enjoyed for breakfast.

Ingredients

  1. Sticky rice / Glutinous rice:
  2. 1 kgwhite glutinous rice / sticky rice - soak for 4 hours or overnight
  3. 750 mlcoconut milk
  4. 6kaffir lime leaves
  5. 5salam leaves (Indonesian bay leaves)
  6. 3pandan leaves
  7. 2 tspsalt
  8. Spiced chicken floss
  9. 700 gboiled boneless, skinless chicken breast - shredded
  10. 2 tbspcanola oil
  11. 100 gshallots
  12. 6 clovesgarlic
  13. 6candlenuts
  14. 2 tspground coriander
  15. 6kaffir lime leaves
  16. 3salam leaves - bay leaves
  17. 500 mlcoconut cream
  18. 3 tspsalt
  19. 3 tbspsugar
  20. 2lemongrass

Steps

    Sticky rice: Prepare a steamer over medium high heat. Place rice in a steamer proof bowl and steam for 15 minutes.

    Meanwhile, place coconut milk, kaffir lime leaves, salam leaves, panda leaves and salt in a pot and bring to a boil. Add the steamed sticky rice into the pot and cook until all the liquid has been absorbed by the rice.

    Remove the rice and return into the steaming bowl. Steam for another 30 minutes until the rice is fully cooked. Stir and discard all the leaves, keep warm.

    Spiced chicken floss: Boil the chicken breast until cooked. Drain, tear into really small pieces like how the chicken floss should be, and set aside.

    Grind shallots, garlic, candlenuts, coriander seeds into fine paste.

  6. 6

    Heat oil in a frying pan and sauté the spice paste until fragrant, about 3 minutes.

  7. 7

    Add kaffir lime leaves, salam leaves and coconut milk and bring to a boil.

  8. 8

    Add the shereded chicken into the pan, season with salt and sugar. Stir and cook until all the liquid is fully absorbed by the chicken. The chicken floss needs to be dry. Remove from heat, discard the leaves, and set aside to cool.

    Assemble the lemper. Line a square baking pan (8 inches x 8 inches x 2 inches) with plastic wrap with enough hand so the lemper can be easily removed.

    Take half of the sticky rice, spread evenly and press. Add all the chicken floss, spread evenly and press again. Take another half of the rice, spread evenly, and press again. Leave it to cool.

    Grab the plastic wrap overhang and remove from the pan. Use an oiled knife to cut into individual portions. In this stage you can eat it right away.,

    Wrap the individual lemper with banana leaves and pan fried with a little oil until char brown to infused the banana leaves flavour into the rice.
