Moreover, we are also skeptical about the quality of oil in the store bought ones.
So I make these in very small quantities after long time gaps.
Because although it's homemade and hygienic, the calories in it refrain me from making it too often.

So I make these in very small quantities after long time gaps.

Steps

Wash and peel the potatoes.

Slice them carefully. Heat 2litres water, as much that finger can be dipped in it. Do not boil the water.

Add vinegar to the water. The vinegar helps to remove the starch from the slices.Add the sliced potatoes into this heated water and switch off gas. Leave the slices in this water for 5 minutes. Note not to over cook the slices. Meanwhile, keep ice cold water ready.

Take out the potato slices from the heated water and add into the ice cold water. This stops the cooking process. Leave them for 2 minutes.

Now put the potato slices on a clean cloth and pat them dry. Heat oil and deep fry the potato slices in three batches.

Do not stir until the slices hold shape a bit. Turn gently and fry the potato wafers for about 3-4 minutes on medium slow gas. When crispy take the wafers out and drain the excess oil. The colour will not be very white like the store bought ones. Because at home such big frying kadhaais are not available.

Likewise, fry the other two batches also crispy. Note no salt needs to be added. Store bought wafers usually are not salted. However, if desired sprinkle some salt after frying. Cool and serve. Store in airtight container. Enjoy. Happy Cooking😊!!
