1. Saute (optional for more flavor):
In a pressure cooker or pan, heat olive oil or ghee. Add ginger,Saute for a minute. - 2
2. Add vegetables:
Add chopped dudhi and tomatoes. Sauté for 2 minutes. - 3
Add 2 cups of waterand put salt as per taste. Pressure cook for 3 whistles or simmer covered until soft.

4. Blend:
Once slightly cooled, blend the mixture until smooth. - 5
5. Strain (optional):
Strain for a smooth texture or keep as is for more fiber and squeezed 1 tbsp lemon juice - 6
6. Season and serve:
Reheat, add salt and pepper. Garnish with coriander.
