Of course if you don't like lemon curd, you can fill these with custard or jam or even make them savory and minus the sugar in the recipe and add a cheese sauce filling with onion 🤤

Of course if you don't like lemon curd, you can fill these with custard or jam or even make them savory and minus the sugar in the recipe and add a cheese sauce filling with onion 🤤

Steps

In a large bowl, using your hands crumble your butter, sugar, salt and flour together to make bread crumbs

Slowly add your water and knead until it becomes a dough.

Cling film and pop your dough into the fridge for 15 minutes. Whilst your dough is cooling preheat your oven to 160c

Take your dough from the fridge and on a floured surface, roll out your dough and cut circles to fit your mini tart tins. Using a fork, make a pattern around the top of the dough.

Cut some baking paper and put inside of your mini dough tins and place some pasta or rice inside to weigh the baking paper down. Pop into the oven for 15 minutes to blind bake.

Take out of the oven and remove the baking paper and pasta or rice and put back into the oven for another 15 minutes until golden brown and cooked. Allow to cool completely.

While your cases are cooling, they take about 30 minutes to cool. Mix up your lemon curd in a bowl so it's smooth.

Divide your lemon curd into each tartlet and allow them to set in the fridge for an hour. Enjoy 😍😍
