Cauliflower Cream Soup🥣

After a long weekend of overindulging (because it was Memorial Weekend), this recipe is just perfect!
It’s time to eat a bit of veggies, so this cauliflower soup is just what we need!
It’s super easy to make and has an amazing flavor and texture!
If you have kids at home, purees are a perfect way to get them to eat cauliflower or any other vegetable. In my house, we always had them, and I still make them because we love them!

Boil Water & Prep Potatoes:
First, bring a large pot of water to a boil. While waiting, peel and chop the potatoes into chunks. Once ready, add them to the pot. - 2
Prep Cauliflower:
Cut the cauliflower into florets and rinse well. - 3
Prep Onion:
Peel the half onion and cut it into 2 or 3 pieces. - 4
Cook Everything:
Add the cauliflower and onion to the pot with the potatoes. Let it all cook together. - 5
Check Doneness:
Boil until the potatoes and cauliflower are tender—you should be able to easily pierce them with a fork or knife. Drain everything using a colander (optional tip: run cold water while draining the hot water). - 6
Blend & Add Dairy:
Return everything to the pot. Add milk and butter to taste (there are no fixed amounts, adjust depending on your preference for thickness and creaminess). For a thicker soup, use less milk; for a creamier texture, add more milk and butter. - 7
Season to Taste:
Taste the soup and adjust salt. If you’d like, add a bit more butter now. - 8
Serve:
Pour the soup into bowls, sprinkle with freshly ground black pepper, and drizzle a little olive oil on top. - 9
