My ‘Soy Sauce Rice’ is delicious as it is, but ‘Abura-age’ (Fried Thin Tofu) can add extra flavour and Umami to it. ‘Abura-age’ might be too difficult for you to find. Fried Tofu called ‘Tofu Puff’ is a very similar food and it is easier to find as many Asian grocery stores sell it. You can use Tofu Puffs instead.

Ingredients

30 minutes
4 Servings
  • 2 cups(*180ml cup) Japanese Short Grain Rice
  • 1 teaspoonDashi Powder *I used Katsuo (Bonito) Dashi
  • 2 tablespoonsSoy Sauce
  • 1 tablespoonMirin
  • 1 teaspoongrated Ginger OR finely sliced strips
  • 2 sheets‘Abura-age’ (Fried Thin Tofu) *cut into small pieces
  • *Note: You can use 30-40g Tofu Puffs
  • Toasted Sesame Seeds, finely chopped Spring Onion, shredded Nori, OR Shiso, etc. for topping *optional

Steps

30 minutes

    Wash Rice and place in the rice cooker’s inner pot. Add Water up to the 2-cups marking, add Dashi Powder, Soy Sauce, Mirin and Ginger, and gently stir.

    Cut ‘Abura-age’ into small pieces. I cut them in half in lengthways, then cut into 1cm wide strips. Scatter them on top evenly, but DO NOT stir.

    Press ‘COOK’ button to start cooking. When the rice is cooked, let it steamed for 10 minutes. Then loosen and mix gently.
