In a bowl, mix cassava flour, cocoa powder, instant coffee powder, baking powder, salt, chai seeds, nutmeg powder, cinnamon powder. Keep aside.

In a mixing bowl, whisk together softened butter, regular sugar until light and creamy. Add egg and honey and whisk again until well combined. Gradually add dry mixture into the wet mixture and mix until a soft dough, if dough is dry add 1 tbsp milk and mix well.

Scoop small portions of dough shape into round cookies and place on a baking tray. Bake at 180°c for 15 - 18 mins, until the edges are lightly golden and the tops are set, let it cool completely. Garnish: Drizzle a little honey over the cooled cookies,add mint leaves.

Note: I used cassava flour in this recipe, but you can use tapioca flour in the same amount. The texture may be a little softer and chewier- both option work beautiful.
