A delicious way to eat more vegetables. With these amounts, I made 40 meatballs, but as always, it depends on the size you make them.

Chop the onion, leek, and bell peppers.

Peel and slice the carrots, and cut the tomato and zucchini.

Sauté all the vegetables in a pot with a little extra virgin olive oil.

Cover with the vegetable broth and let cook.

Soak the slice of bread in the milk.

Place the ground beef in a bowl with a little salt, chopped fresh parsley, the egg, and the bread soaked in milk.

Mix very well and form the meatballs. Fry them in a skillet with extra virgin olive oil.

Set aside.

When the vegetables are ready, blend them well until you have a smooth sauce.

Add the meatballs to the pot with the sauce and let everything cook together for about 8-10 minutes so the flavors combine.

Plate and serve with your choice of side. Today I served them with spaghetti. Serve hot. Enjoy!
