Ingredients

40 meatballs
  • 2.2 lbsground beef (1 kg)
  • 1/2large white onion
  • 2carrots
  • 1/4leek
  • 1/4medium red bell pepper
  • 1/4medium green bell pepper
  • 1/4zucchini
  • 1ripe tomato
  • 1 slicesandwich bread
  • 1egg
  • 5-6 tablespoonsmilk (75-90 ml)
  • 1 2/3 cupsvegetable broth (400 ml)
  • Salt
  • Extra virgin olive oil

Steps

  1. 1

    Chop the onion, leek, and bell peppers.

    Peel and slice the carrots, and cut the tomato and zucchini.

    Sauté all the vegetables in a pot with a little extra virgin olive oil.

    Cover with the vegetable broth and let cook.

    Soak the slice of bread in the milk.

    Place the ground beef in a bowl with a little salt, chopped fresh parsley, the egg, and the bread soaked in milk.

    Mix very well and form the meatballs. Fry them in a skillet with extra virgin olive oil.

    Set aside.

    When the vegetables are ready, blend them well until you have a smooth sauce.

    Add the meatballs to the pot with the sauce and let everything cook together for about 8-10 minutes so the flavors combine.

    Plate and serve with your choice of side. Today I served them with spaghetti. Serve hot. Enjoy!
