Mexican fried rice

My Mexican fried rice is my all-time favorite dish. Whenever I make vegetable pasta for my son, I always make Mexican fried rice for myself.
I actually use more vegetables than rice in it, and Schezwan sauce is an absolute must! What's really great is that until now, I used to buy the Schezwan sauce from outside, but now I make that at home too.

Mexican fried rice

First boil water for the rice.Once the water is boiling, add salt and then add the soaked rice. When the rice cooked, turn off the gas. Drain the cooked rice using a colander and pour cold water over them to stop the cooking process.

Heat oil in a wok and sauté the garlic in it. After a short while, add the ginger. Then, add the green chili paste and sauté it as well.

Turn the gas to high and add the onions, bell peppers, and cabbage. Then, add Schezwan sauce and tomato ketchup, and mix well. Now, add a little water, along with sugar and salt, and bring this sauce to a simmer. Be careful that it doesn't stick to the bottom. Finally, add the cooked Rice mix thoroughly, and turn off the gas.
