During the month of vegetarian fasting, if you have guests and need to prepare a quick vegetarian meal, this dish is the fastest to make and is light and refreshing.

Chop the vegetables, mushrooms, and tofu into small pieces. Cut the corn kernels off the cob.

Bring a pot of water to a boil. Add the corn and kohlrabi to make a sweet broth. Once boiling, add the mushrooms and tofu, then season with vegetarian seasoning to taste. Finally, add the bok choy.

Blanch the noodles and place them in bowls. Ladle the broth over the noodles and top with the vegetables. Serve with soy sauce and chili on the side.
