Firstly cut the brinjal and fry it in using gingely oil
- 2
In that oil pan put the grinding paste ingredients one by one (onion, garlic, ginger, cumin, pepper, tomato, powders, coconut and salt little bit) and sauté it well until raw smell gone

Grind the sautéed ingredients into paste

Next put pot in stove (clay pot is traditional) add gingely oil,after heating put mustard, fenugreek, curry leaves, dry chilli and onion(shallots) one by one and then sauté it well.

And then Add the paste and put some water and bring it to boil and then add fried brinjal to it. After it boil add tamarind water.

Cover it with lid and boil for 5mins and it becomes little thicker like gravy … our brinjal gravy (எண்ணெய் கத்திரிக்காய்)is ready.. serve it with chappathi or rice
