Boil the carrot in water to make a simple broth. Once the carrot is cooked, add the spinach.

Dip the Vietnamese rice paper in water to soften. Sprinkle white and black sesame seeds on the rice paper, place a shrimp on top, and wrap it up.

Scoop some of the vegetable broth into a pan. Dissolve your favorite clean-label tom yum soup base in the broth. Arrange the wrapped shrimp dumplings in the pan, cover, and cook until done.

Place the cooked vegetables on the bottom of a serving plate. Put the cooked dumplings on top. Sprinkle with a little black pepper and drizzle with a bit of sesame oil, then garnish with chopped scallions.
