Pour 1tsp of olive oil in a pan and heat up. Chop the mushrooms finely and add to the pan. Add the spinach (I used 3 balls of frozen spinach) Let cook.

Add the turkey mince and cook thoroughly. Add a pinch of salt and pepper and stir all the ingredients together and turn off the heat. (Any seasoning is optional. I added a pinch of turmeric and garlic power)

Heat up the Piri Piri grain mix in the microwave for 2 minutes and pour half of the pack into the cooked mince. Stir.

On each plate add the lettuce leaves (5 leaves per serving) add a scoop of the mince mix onto each leaf.

Add a blob of Greek yoghurt on each one with a dash of hot sauce.

Cut up the Cucumbers into small cubes and sprinkle on top.
