Leftover Ka Makeover Protein Pack Paratha 🫓 (Pudi)

One dish can have many names!
For many this could be paratha 🫓 for us Marwadis in Jodhpur, this is always called a "Pudi"
I'm sure there must be many ways to clean fridge and make something from leftovers like tikki, muthiya etc.
When I was a kid and there weren't options for fancy tiffin, this pudi used to be a staple and we never got bored of it either !! I've taken it in my tiffin and I am so glad my kids have done that too and they still ask to make extra gatte or dal or sabji that they like so the next day these soft pudis are there for breakfast !!

In big bowl add Khichadi + paneer + dal + chopped herbs + spices + multigrain aata + Besan

Mix it nicely with hands 🙌 & knead it, if required sprinkle some water & make dough cover &keep aside for 5-7 minutes

Apply little oil / ghee knead it again & make equal size ball

Dust little flour & roll it. Heat nonstick griddle & roast paratha both side by applying ghee / oil till brown spots appear
