Prepare the cucumber. Peel cucumber and slice it lengthwise. Scrape out the seeds using a small spoon. The slices will look like half-moons. Sauté the slices for about two minutes per side until slightly golden.

Prepare the sandwich. Spread the bottom slice of bread with 1T ricotta cheese. Lay the cucumber slices on top of the cheese, then top with corned beef. Slather the top slice of bread with your favorite sandwich sauce. Enjoy!
