You’ll be amazed by the result and remember this recipe!
During World War II, eggs and oil were scarce. Mayonnaise served as a convenient substitute, allowing people to make a moist and tasty cake without relying on traditional ingredients.
Mayonnaise is mainly made from oil and egg yolks, which add moisture to the cake. The lecithin in egg yolks helps distribute the fat evenly throughout the batter, resulting in a tender, moist crumb.
So, here’s how to make a rich and irresistible chocolate cake without beating eggs or using heavy cream. The creamy mayonnaise replaces both the eggs and the fat. It mixes in easily with just a quick stir.

Grease a Bundt pan or two 9-inch round cake pans if you want to make a layer cake. If using cake pans, line the bottoms with parchment paper.
- 2
In a bowl, combine the dry ingredients: flour, sugar, cocoa powder, baking powder, and baking soda. Mix well with a spoon or a whisk.
- 3
Add the mayonnaise, water, and vanilla extract.
- 4
Mix well until smooth.
- 5
Pour the batter into the prepared pan and bake at 350°F (175°C) for 35–40 minutes. Let the cake cool completely before removing from the pan.
- 6
Cut into pieces, serve with ice cream, and enjoy responsibly!
- 7
Tip: To make a layer cake, bake in two 9-inch (22 cm) round pans. Fill the layers with pastry cream, instant pudding, or buttercream. For the top, you can use ganache, buttercream, or cream cheese frosting.
