Steps

Arhar dal.... Wash dal, soak in water for 1 hr, strain it, keep aside. Take a pressure cooker, add dal, hing, haldi powder, salt & oil or ghee. Add 2 cup water, place the lid, give 4 whistles on high flame, lower the flame, cook it for 2 minutes.

Turn off the flame, allow it to depressurise naturally, open the lid after 10 minutes, mix dal gently, it should not be very thin & mushy. Take out in a bowl, keep aside.

Take a tadka pan, add ghee, heat it, saute garlic till brown, add dry red chilli, cook it until brown.

Pour this tadka over the cooked dal, mix it well, take out in a serving bowl, keep aside.

Now take another tadka pan, add ghee, heat it, in goes onion, stir fry it until brown, turn off the flame, add red chilli flakes, transfer it to the cooked dal, mix it while serving.

Aloo Dum... Boil aloo, cool down, peeled, pricked, add in a mixing bowl, in goes salt, toss it.

Take a wok, add oil, heat it. Fry aloo in batches till pink, take out in a bowl, keep aside.

Reduce oil accordingly, heat it again, add tejpatta, dalchini, choti elaichi & jeera, let it splutter.

In goes onion, stir fry it until light brown.

Add in ginger garlic paste, saute it until rawness is released, add lil water to avoid burning.

Now add tomato puree & salt, mix it well. Cook it covered on low flame until oil has surfaced.

Open the lid, increase the flame, add red chilli powder & dhania powder, mix it well, sprinkle lil water, stir fry it until oil has oozed out.

In goes fried aloo, stir fry it gently for a minute, sprinkle garam masala powder, mix it well.

Add in 1 cup hot water, mix it well, in goes dhania patta, stir it, give a boil.

Lower the flame, cover it with the lid, cook it until gravy turns a lil thick. Turn off the flame, open the lid after 10 minutes.

Take out in a serving bowl, garnish it with a dhania sprig...

Kaddu Sabzi... Peel kaddu, diced it, wash it, strain it, do not keep it in water.

Take a wok, add oil, heat it, in goes methi dana, jeera & garlic, saute it until brown.

Add in kaddu pcs, in goes salt, stir fry it for a minute.

Cook it covered on low flame until almost cooked.

Now add red chilli powder, mix it well, stir fry it on low flame until a lil dry.

Turn off the flame, cover it for a minute, open the lid, take out in a serving bowl, garnish it with a dhania leaf...

For Thali...In addition to it...Roti, Rice, salad, raita & custard...
