To make the chicken momos first we have to marinate the chicken to get more flavours. I had taken chicken breast and mince it in a food processor. I had finely chopped or crushed the onion, ginger,garlic, green chillies, coriander leaves and cabbage. Don't grind them finely chop them or finely dice them this will give a best result. Now to the chicken mince add these ingredients with all the dry spices and oil mentioned above in the filling section. Mix them all very well with the chicken mince.

Once everything is well combined then massage the chicken for 6-8 minutes. By this process the chicken will become more juicy and soft also. Kachri powder and sumac powder is a meat tenderizer. In place of that you can use raw papaya also. Grind the raw papaya with it's green outer covering without water. Make sure the chicken marinade is dry. Now keep it in the refrigerator for 1 hour or overnight or you can even store it in the freezer or deep freezer for longer time.

While the chicken mince is marinating let's make a dough for the outer covering of the momos. In a big bowl add wheat flour along with rice flour and salt mix them all well then add oil and mix again. Now add little water at a time and start kneading the dough. Once all the dough is combined knead it to make it smooth but it should be a little hard dough just like the poori dough. Allow it to rest for 15 minutes. Then knead it again for 2-3 minutes and it will become super smooth.

Make equal portions from the dough and then make balls of it. Make a smooth balls and cover them to rest for 5 minutes. Meanwhile let's make the chilli garlic oil sauce to be serve with the momos. For that finely chop the onion and garlic. It should be really fine and then add red chilli flakes to it. Mix them well now heat up the oil and make it to come on a boiling stage. Once that point is reached wait for 2 minutes to cool it down a bit then add it to the onion, garlic and red chilli flakes.

Mix them well then leave it for 5 minutes to get all the flavours of it then add all the sauces to it and mix it well and your chilli garlic oil sauce is ready. Now take a big vessel add water to it keep it on the flame and allow it to boil. On the other side roll out the dough to a thin disk. Roll out to the thickness between poori and chapatis. Now cut circles from it with a cookie cutter or glass or bowl or anything you have. Then add 1 tsp filling on one circle. You can add more or less also

Shape it or design the momos you like. I simply make it like a gujiya. Like so make 10-12 momos. Add 1 tsp salt and oil to the boiling water. Once the water start to boil add the prepared momos to it. Initially it will go down to the surface then cover it and cook it on high flame for 15-20 minutes by this time the momos will start floating on top. This is the sign that the momos are completely cooked inside out. Now take it out draining all the water. Like so cook all the momos.

You can steam it also in a normal way. Now take a pan grease it with little oil and place the cooked momos on it. Cook it flipping over till both the sides get a light golden colour. Then add 2 tbsp prepared sauce in it and cook it for another minute on high flame and take it out to serve. Garnish it with more prepared saute and toasted white sesame seeds if you like. Or simply serve it like the way you want it to be served. Make it and enjoy it with your family and friends. Happy Cooking😊
