Today, my mother-in-law brought fresh green lobiya beens from the market, and I decided to do something different from the usual way. I added roasted peanuts, sesame seeds, and chana dal to give it a unique flavor. I also had a totapuri mango that was slightly ripe, so I chopped it up and added it to the dish. It turned out to be incredibly delicious! You can serve this vegetable with rotis, parathas, or plain cooked rice. It was really well-received by everyone at home.

First, gather all the ingredients to make the recipe. Add ginger, garlic, and chilies to the grinder and coarsely grind them. Grate the tomatoes and set aside, chop the green chilies. Grind the roasted white sesame seeds, roasted peanuts, and roasted chana dal in the grinder and transfer to a plate. Wash the fresh green lobiya beens with water and drain well.

Heat oil in a pan, add bay leaves, a piece of cinnamon, star anise, and dry red chilies, and sauté. Then add mustard seeds, cumin seeds, fennel seeds, and a pinch of ajwain (carom seeds), and mix well. Once they splutter, add the ground paste of ginger, chilies, and garlic, and saute.

After a minute, add grated tomato and mix well. Add hing and spices (salt, coriander powder, turmeric, and red chili powder) and mix well. Sauté for about three minutes, then add the washed split lobiya(choli dana) and mix well. Add hot water to the vegetables, stir, cover with a lid, and let it cook.

If needed, add hot water to the vegetables and mix well, cover and let it cook. Once the vegetables are cooked, add the mixture of roasted sesame seeds, peanuts, and dalia powder, and chopped raw + ripe mango. Mix well and let it combine for 2-3 minutes. Finally, add sugar (optional) and mix well. Turn off the heat and add coriander leaves, cover and let it rest for 5 minutes. (I didn't add coriander leaves as I didn't have any.)

I served the hot fresh green lobiya beens (green choli) and raw mango sak with phulka rotis, cucumber salad, gunda pickle, and buttermilk. Everyone loved this new green lobiya beens(fresh green choli dana) sak.. and I just loved having it with cooked rice, it was pure bliss!

In a large bowl, combine wheat flour and salt.
Add ghee or oil and mix well.Gradually add water and knead the dough.Knead the dough for 10-15 minutes, then let it rest for 15 minutes.
Divide the dough into small portions.Roll out each portion into a round shape.Cook the roti on a tawa and flip it to cook both sides.
Serve hot roti.
