It is an easy and tasty veg thali recipe prepared under 60 minutes. It is made with tasty Gujarati dishes assembled and served in a traditional thali. it is generally served during festivals or any occasion but can also be served for lunchtime with or without any variation to it. It is a simple thali recipe with all the basic ingredients from your kitchen.

First of all soak rice and dal for 10 minutes. Now cook rice in water. Add 2 pinch of salt and cook until soften.then strain it and keep aside. Boil dal in pressure cooker until 2-3 whistles.

Now to make sambhariyu shak, First of all, add the peanuts, sesame seeds and desiccated coconut in a mixer grinder and grind themcoarsely.. Mix all the remaining spices (as mention)and prepare the stuffing masala.

Wash the brinjal, peel potatoes and onions, cut them vertically and fill them with the masala. First steam the potatoes in a steamer for 5-7 minutes, then add the onions and brinjal and cook them untill soften.

Heat oil in a pan and crackle mustard seeds, cumin seeds, asafoetida, dry red chilies then add tomato, green chili and curry leaves.. Add all the boiled stuffed vegetables and add remaining spices, add garam masala.mix well. Add 1 cup of water. After 2-3 minutes, add coriander and remove from heat. Bharelu sambhariyu shak is ready.

Now to make phulka roti. Sift the wheat flour. add oil and mix. Knead the medium dough. Roll the lemon size ball into flat thin roti.

Roast the roti one side little cook.Turn and cook the other side.This should be a little bit more cooked than the first side. Brown spots should be visible.Now hold the roti with a tong and keep the first side which was cooked, directly on fire. The roti will start to puff. Take it out. Phulka roti is ready. Apply ghee on it.

Gujrati lunch thali is ready. When Serve the lunch, Add salad, chas,papad pickle,namkeen farsan and enjoy.
