In the morning, Heat a non-stick pan. Keep 1 tablespoon of milk aside and bring the rest of the milk to a boil. Once it boils, add sugar and stir. after 5 minutes, add coffee and cocoa powder and blend with a hand mixer. Then add chocolate slab and continue stirring constantly.

After about 15 minutes, mix the cornflour into the milk you set aside and slowly pour this mixture into the boiling milk. Let it boil until it reduces by one-third, then turn off the gas. Its takes 50 minutes... Add cashew pieces and occasionally stirring every so often until it cools down. Once cool, refrigerate it to chill thoroughly.

In the evening, take the cream out into a bowl. Lightly blend it with a hand blender until smooth. Then, gently fold it into the milk mixture. Return it to the fridge to chill again.

Next morning, set up your ice cream maker - Kothi. Pour the ice cream mixture into the maker's container. Close it, and then layer ice and rock salt around the container, alternating layers of ice and rock salt all the way to the top. Turn on the machine. Add more ice and salt as needed during the process.

Once the machine stops, transfer the ice cream from the container into an airtight container and store it in the freezer.

After 3 to 4 hours, your delicious ice cream will be ready to enjoy!
