I found this recipe online on a vegan recipe site, and after trying it, it became a regular dish for me. All my guests always love it and often ask me for the recipe. Eating well and simply is easy.

Slice the cherry tomatoes in half and sauté them for a few minutes in a pot with olive oil, salt, and the garlic clove.

Add the tomato paste and a splash of water to dissolve it well, then stir.

Add the rice and toast it for a few minutes.

Cover with vegetable broth and cook for about 20 minutes, or until the rice is done.

Finish by topping with a few drops of pesto and a sprinkle of nutritional yeast flakes.
