Cucumber, Carrot, and Purslane Salad

Peel and wash the vegetables.

Finely chop the purslane, grate the cucumber and carrot, and gently squeeze out excess liquid. Place the vegetables, garlic, salt, and vinegar in a bowl and mix well.

Add the yogurt and mix again. You can adjust the amount of yogurt to your taste.

We served this salad with stuffed vegetables. You can also serve it on toasted bread or as a side for grilled meat.
