Tomato and Lettuce Zōsui (Japanese Rice Porridge)

I used the umami of the tomatoes and the crunch of the lettuce to create this heartwarming zosui. Feel free to add whatever vegetables you like.

I used the umami of the tomatoes and the crunch of the lettuce to create this heartwarming zosui. Feel free to add whatever vegetables you like.

Chop the vegetables into bite-size pieces.

Bring the dashi stock to a boil and add the tomatoes. Let it simmer, covered, for 5-10 mins.

Once the tomatoes are cooked, mush them up slightly and add the lettuce. Simmer for another 5-10 mins.

Serve with rice, and garnish with sesame oil, ground black pepper and finely chopped spring onion. Enjoy!
