Initially soak soya chunks into water. I soaked for about 20-25 min. In the mean time chop veggies. Then squeeze & drain water. Again soak them into fresh water then squeeze & drain water. Do this process 2-3 times. This can reduce the raw smell of soya. Then into mixer jar, add green chilies +ginger+ garlic + soaked soya chunks. Ground fine.

Transfer soya paste into a bowl. Into that add sooji + jowar flour + curd/ buttermilk. Add water. Mix them well. Cover it. Now in a kadhai add oil 1 tsp. Add mustard seeds. Add chopped veggies. Shallow fry veggies for 7-8 min so that rawness will go off. Turn off gas & put it aside.

Once veggies are cooled, add them into the soya batter. Mix all ingredients well. Add little water to make consistency like uttapam batter. This batter for Rostie is ready. Cover batter with lid & rest it for 20 min.

After 20 min, check batter. Add salt & little water if required.Heat small nirlep pan. Add oil 1/2 tsp into pan. Add sesame seeds into oil. Let it crackle. Pour a 2 ladle ful of batter into pan. It should be thick like uttapam. Spread onion slices, red chili powder, coriander chopped, sesame over the rostie. Put lid on it. cook for 5 min.

After 5 min, remove lid. Cook again for 2-3 min. Then flip the rostie gently & allow to roast it's other side. Drizzle oil while flipping it. Cook other side until brown & crisp. Once brown in colour, remove Rostie into plate. Serve with tomato ketchup or green chutney. Enjoy it as a breakfast or tiffin recipe.
