Winter melon helps cool you down and reduce swelling, making this soup perfect for hot summer days.

Bring about 5 cups water (about 1200 ml) and the ginger slices to a boil.

Add the winter melon pieces, cover, and bring back to a boil. Reduce to low heat and simmer for 5 minutes, then turn off the heat. Let it sit, covered, until the winter melon turns translucent, about 5–10 minutes depending on the size of the pieces.

Once the winter melon is translucent, bring the soup back to a boil. Add the clams, and when they open, season with salt to taste and serve. Tip: Make sure to purge the clams of sand before cooking!
