Ingredients

30 minutes
4 servings
  • For malai chop :
  • 3/4 cupfine suji / semolina
  • 1 tbspghee
  • 1 cupmilk
  • 3 tspsugar
  • 1/4 tspcardamom powder
  • For malai :
  • 500 mlfull fat milk (Amul Gold)
  • 4 tbspmilk powder
  • 3 tbspdate palm jaggery or as needed
  • 1 pinchsalt
  • For garnishing:
  • Few pumpkin seeds
  • As neededchopped dry fruits (optional)

Steps

    Heat 1 tbsp ghee in a wok. Add suji and roast it lightly.Add sugar and cardamom powder. Add milk gradually to make a tight smooth dough.

    Transfer the dough to a plate and set aside to cool.Grease your palms with ghee and knead the dough for 5 minutes till smooth. Pinch lemon sized balls and flatten to make a round shape.Set aside.

    Now boil milk in a pan.Add milk powder to the boiling milk.Mix well to prevent lumps. Keep stirring at intervals in low to medium flame so that milk doesn't stick underneath. Boil till milk is reduced to half. Slowly add the malai chop in the boiling milk and gently stir.When nearly done, add liquid date palm jaggery or sugar, pinch of salt and mix well.Cook for 5 minutes.Pour in a serving bowl.

    Wait till rasmalai doubles in size as it cools.Garnish with few pumpkin seeds or chopped almonds and cashewnuts. Refrigerate for 4-5 hours Yummy Suji Rasmalai is now ready to be served.Serve chilled as an aftermeal dessert on special occasions like Independence Day celebration and similar other festivities or offer to Gopal on Krishna Janmashtami or any other similar religious occasions.
