Wash potato, tomato, onion, green chillies. Peel potato and chop fine. Chop tomatoes and onion, chilli fine, set aside

In a pan heat oil, add chopped onion and cook on medium flame till translucent about 3-4 mins

Add chopped tomatoes and cook about 2-3 mins to soften, add chopped green chillies and cook 1 min
- 4
Add chopped potatoes and mix well, add Kashmiri red chilli powder, salt, water and mix all well. Add water and cover to cook for 7-8 mins, in between stir to check so that potatoes don’t stick to the bottom of the pan

Add chopped coriander leaves and stir

When the potatoes are cooked break the eggs one at a time and cover to cook for 3 mins

Set aside snd enjoy with Pau immediately
