For Carrot Halwa - Wash and peel carrot, grate and set aside.

In a pan heat ghee, add grated carrot and cook to soften, add castor sugar and milk and cook further to mix well

Add saffron strands and set aside

For Spinach - wash spinach and Blanch, add to blender and blend smooth, set aside. Heat ghee in a pan and add the spinach, stir to reduce consistency.

Add milk, castor sugar and stir well. Switch off the flame and add white chocolate and let it blend well, set aside

For White part - in a bowl mix rice flour with milk and set aside

In a pan heat ghee and add milk, when heated, add rice flour mix and stir well, add castor sugar and mix well.

Add white chocolate and switch off the flame, set aside

To assemble - in a serving glass add spinach base, add milk in the centre, and carrot halwa on the top, garnish with saffron strands and refrigerate to enjoy cold sweet medley
