Heat oil in a pan, add mustard seeds and curry leaves.

Add onion, ginger, and sauté until translucent.

Add bell peppers, tomato, cauliflower, and cook for 3-4 min.

Add paneer, turmeric, chili powder, and salt. Mix well.

Add avocado, gently mix, and cook for 2 min. Turn off heat.

For paratha, knead flour, salt, and water into a soft dough.

Roll dough, apply oil, fold and roll to make layers, then cook on a hot pan with oil/ghee.

Serve avocado bhujia hot with laccha paratha.
Tips
For extra flaky parathas, ensure to roll the dough thinly and apply enough oil while layering.
