Bring water to a boil in a large pan. Add in the ginger, garlic, and green chillies. Cook for a minute or two.

Add in the potatoes, carrots, and beans. Cook until half done.

Next, add the sliced onions, spring onion whites, cabbage, and tomatoes. Add the salt and continue to cook until the vegetables are tender. Make sure they don’t turn mushy.

Just before switching off the flame, add the spring onion greens and chopped coriander. Mix well.

Chamthong is ready to enjoy. Serve hot.
