Preheat oven to 200°C.

Place flour, salt, and oil in a bowl. Mix with a spoon.

Add butter and pinch into flour until combined.

Add water gradually, knead until a soft, pliable dough forms.

Dough should not be sticky or crumbly; it should clean the bowl.

Roll dough into a short log, cut in half, cover with plastic, and chill for 1 hour.

For filling, add apples, sugar, cinnamon, lemon juice, boiling water, and salt to a deep pan.

Cook on medium heat, stirring occasionally, until apples are soft and syrupy. Let cool.

Remove one dough half from fridge, roll out to fit a round oven dish.

Flour the dish, press dough evenly to form the crust and add a piece of grease paper ontop

Pour 2 handfuls of rice or oats on top of the grease paper on the crust as weights to cover the bottom.

Bake until crust is cooked but not brown. Remove from oven, discard grease paper and rice or oats, and let cool.

Pour cooled apple filling into the crust.

Roll out second dough half, cut into strips, and arrange on top in a lattice pattern.

Mix egg and milk, brush over dough strips.

Bake at 180°C until golden and apples are tender.

Let it rest and do not serve immediately to avoid the pie falling apart from being too warm

Serve with whipped cream
Tips
For a golden crust, brush the top with egg wash before baking.
