Apple Ginger Cake (GF, DF)

Cooped up this weekend with a terrible cold, I couldn’t help myself but make a warming cake fit for the temperature drop here in Bristol.
I adapted this recipe from one found online (https://www.mamagourmand.com/almond-flour-apple-cake/) but fit for my 7 inch cake tin. I also added ginger and cinnamon for real autumnal feel. Measurements are approximate, as I always measure with the heart (even when baking 😅)
Will definitely make this again, so step photos to come!

Cut a circle of parchment paper to line the bottom of your cake tin, and grease with oil or butter. Preheat oven to 180 C (350 F)

Separate egg yolks from whites. Beat egg yolks with 1/2 cup sugar for about 3 minutes, or until pale, thick and triple the volume (approximately). Mix in vanilla extract.

Fold in almond flour, cornstarch, baking powder and salt with a spatula (the whisk won’t work here, the batter will be very thick). Add in grated ginger and cinnamon.

In a separate (very clean!) bowl, beat the egg whites until very stiff and holding peaks. Slowly incorporate the beaten egg whites into the almond flour mix, about 1/3 at a time until the batter is looser and well combined. Fold in the chopped apple.

Add batter to prepared cake tin and spread evenly. Top with nuts if desired or turbinado sugar (I didn’t have any).

Bake for 25-30 minutes or until lightly browned and an inserted skewer comes out clean.

Cool on a wire rack for longer than you’d like (about 1 hour). Run a knife around the edges of the cake tin before releasing the ring. Slice and enjoy!
