Sort through beans, looking for broken beans, rocks, or dark beans.

Soak overnight or for at least 8 to 10 hours with a hand towel covering the top.

Uncover and if there are floaters scoop and discard. Drain beans in a strainer.

Pour beans and salt pork in crock pot. Add all seasonings and garlic and then chicken broth.

Stir, cover, cook 8 to 10 hours.

If making beans for chili, save the broth! Its perfect already seasoned broth for your chili!
