Kerala style sambhar

Wash and soak tuver daal for 3 - 4 hours. Pressure cook it for 4 - 5 whistles. Open the cooker as it comes to room temperature.

Blend it. Add salt,haldi powder, dhaniya jeera powder, red chilli powder mix well and keep aside.

In a pan take ghee and oil as it gets hot add chana daal, urad daal,jeera and methi dana and add chopped lauki, onion, tomato and ginger garlic paste and mix well. Add very little amount of water and cover it with lid.

As vegetables gets soft add them into Sambhar. Again take oil and ghee add mustard seeds and jeera in it. As it gets crackle add asafoetida,red chilli powder and sambhar powder in it mix well and add lemon juice in it and put it on gas for the boil.

After 4 - 5 boil enjoy sambhar with idly,dosa or uttapam.
