Sauté diced beets and Swiss chard in garlic butter, salt, and pepper until tender.

Blend sourdough into crumbs. Coat chicken with crumbs, garlic salt, and paprika.

Heat olive oil in a pan. Fry chicken 3 minutes per side until golden and cooked through.

Plate mashed potatoes, top with beet mixture, then chicken. Garnish with microgreens.
Tips
Fry the chicken for about 3 minutes on each side for a crispy texture.
