I wanted a little more than a pancake and even though it’s cooked in a pan, I guess it can still be labeled as a “Pan Cake” 😉 so let’s get goin…

Put 1 and 1/2 plantain,eggs and milk into a blender and blend until smooth.

Add ground oats, honey and baking powder and blend. Set aside.

In a frying pan take the butter and cut into small pieces and lay on bottom of pan. Cut the plantain (bananas) into thin slices and lay them on the bottom.

Add choc chips to the batter and mix then turn on the heat to low and pour batter over the plantains cover with a lid and let this slow cook for about 15-20 minutes. Check it with a spatula and put underneath to see if it’s firm enough to flip into another greased pan. If so being extremely careful flip into another pan and cook on this side for about 5-10 minutes.
