Preheat oven to 400°F (200°C).

Cut the squash in half lengthwise and scoop out the seeds.

Brush the inside of each half with olive oil and season with salt, pepper, and garlic powder.

Place cut side down on a baking sheet lined with parchment paper.

Roast for 35–40 minutes, or until the flesh is tender and easily scraped with a fork.

Scrape the inside with a fork to create spaghetti-like strands.

Toss with Parmesan and parsley before serving.
