Grilled Cauliflower with Hummus and Chimichurri

Hummus is a Levantine dip or spread made from cooked, mashed chickpeas blended with tahini, lemon juice, and garlic.
It is a popular Middle Eastern dish, often garnished with olive oil, paprika, and parsley.

Chimichurri is popular in South American countries. it is an uncooked Argentinian sauce made primarily from chopped parsley, garlic, olive oil, and red wine vinegar, often with oregano and chili flakes. It is used as a marinade or a table condiment for grilled meats like steak, chicken.

But I have made this recipe using qualiflower instead of meat. The combination of hummus, cauliflower and chimichurri also looks very good.

  • 1medium head Cauliflower
  • 6 tbsp(2 for marinade, 2 for hummus, 2 for chimichurri) Olive oil
  • 1.5 tsp(1 for marinade, 0.5 for chimichurri) Chili flakes
  • 2 tsp(1 for marinade, 1 for chimichurri) Oregano
  • 2 tsp(1 for marinade, 1 for chimichurri) Garlic paste
  • 1.5 tsp(0.5 for marinade, 0.5 for hummus, 0.5 for chimichurri) Salt
  • 0.5 tspChaat masala
  • 0.5 tspCumin powder
  • 2 tbspSesame seeds
  • 2 tbsp(1 for hummus, 1 for chimichurri) Lemon juice
  • 1Garlic clove
  • as neededWater
  • 0.5 cupCoriander leaves
  • 1Red chili
  • 0.25 tspBlack pepper powder
  • 2Garlic Cloves For Garnish

Steps

    Mix olive oil, chili flakes, oregano, garlic paste, salt, chaat masala, and cumin powder in a bowl.

    Coat cauliflower florets with the marinade and let sit for 10–15 minutes.

    Preheat the grill and grill the marinated cauliflower until golden and cooked through.

    For the hummus, take chickpeas in a blender jar, add sesame seeds, lemon juice, garlic cloves,

    Olive oil, salt, water and blend it until smooth.

    Now add garlic paste, lemon juice and red chili.

    Now add olive oil and mix all until well combined. Chimi churi is ready.

    First take hummus in a plate, put grilled cauliflower on it and now put jimmy choori on it. Garnish with grilled garlic cloves.

    For the chimichurri, take a bowl, add chopped coriander, oregano, chili flakes, black pepper powder, and salt.

    Ready for Serve the grilled cauliflower with hummus and chimichurri.
